So tender, but with so much flavor. Maybe a little too crispy on the edges, I probably needed a few apple cider vinegar spritzes and to wrap about 30 minutes earlier, but I still wouldn’t say they were overcooked.

5 hours at 225 degrees unwrapped, switching which ribs were where on the grill every hour and a half or so.
1 hour at 250 degrees wrapped.
Melted the little bit of fat I trimmed off and had enough to pour on one of the racks before wrapping, that one was even better.
