Grilled Shrimp Skewers with Preserved Lemon & Olives


Smoky grilled shrimp skewers are paired with a bright and briny preserved lemon and olive salad. This simple Mediterranean dish is bursting with bold flavors and comes together in under 30 minutes.

Bold, bright, and so simple, these grilled shrimp skewers with preserved lemon and olives are packed with Mediterranean flavor. Start by seasoning the shrimp with earthy spices of smoked paprika and turmeric, and of course, some freshly grated garlic. Now, while the shrimp soak up all that flavor, make a quick mixture with one of my favorite ingredients, preserved lemons. Now, these are salted lemons that are citrusy and aromatic. Remove the pulp and chop up the rind and then add that to some buttery cassava olives, some fresh herbs, and olive oil. Then skewer the shrimp and grill them for just a few minutes on each side. They don’t need a lot of cooking, but you do want a nice char on the outside. Once done, serve the bright lemon olive mixture on top of the smoky grilled shrimp. The combo of smoky, briney, and citrusy is such a delicious flavor combination. How good does that look?
