I made more hotsauce mash today!

    looks like a nice variety! I am trying my 1st mash this year, is the headspace for you a concern or the mash on the the inside of the jars above the main level? Also what do you like to do with it, eat it as is or blend it with other ingredients for hot sauce? I am hoping to learn how to do this correctly so I can get more flavor and not just use vinegar/lime in my hot sauces.
