Smoked a tongue on Sunday. Wasn't sure what to expect but cooked to 199 internal. Tasted like pastrami. Wife would not try because of the texture.

    It naturally has a bit of that corned beef flavor and texture, strangely. I usually sous vide and sear but I think I just found my new experiment.

    I’ve smoked them with and without skin , marinated and not. I like it better after it cools

    I’ve had lengua a few times and I like the flavor. Do you think maybe if you got to like 204 it might be a bit more tender?

    I live in Vegas where tongue is expensive, but I usually describe lengua as tasting like filet with the texture of the fatty bits.
