i’m 100% sure i posted this at least once on this sub, but when i started working at a 1 star, chef told me to go to a diner for weekend breakfast, sit at the counter, and watch the cooks because they are absolute masters of their craft. he was right. cranking all that out is hectic af, even when you do have FOH + dish…

I’ve said this in every kitchen I’ve worked in, it’d be good for both crews to switch shifts for a week. Gain perspective on what it’s like to be in the others shoes.

A POS system might be nice too… I haven’t worked off of handwritten tickets since the 90’s.

Work as proficiently as possible but block out the noise do what you can and NMFP is the guests have to wait.
