Recipe: Crispy Feta and Honey Filo Parcels
Ingredients (makes 12 parcels):

12 sheets filo pastry (thawed if frozen)
200g (7 oz) feta cheese, crumbled or cut into 12 small cubes
2 tbsp honey (plus extra for drizzling)
1 tsp dried oregano
Pinch of sea salt
Pinch of black pepper (optional)
50g (3-4 tbsp) unsalted butter, melted (or olive oil for brushing)
Sesame seeds (optional, for garnish)
Instructions:
Preheat the oven: Set to 180°C (350°F) and line a baking tray with parchment paper.
Prepare the filo: Lay one sheet of filo pastry on a clean surface. Brush lightly with melted butter. Fold in half or cut to create a square, depending on sheet size.

Add filling: Place a small cube or 1-2 tsp of crumbled feta in the center. Sprinkle with a pinch of oregano, a tiny pinch of salt, and a drizzle of honey (about ½ tsp). Add a pinch of black pepper if desired.
Fold the parcels: Fold the filo over the filling to form a neat envelope or triangle. Brush edges with butter to seal. Repeat for all parcels.
Bake: Place parcels on the baking tray. Brush tops with butter and sprinkle with sesame seeds (optional). Bake for 12-15 minutes or until golden and crispy.
Finish: Drizzle warm parcels with a little extra honey. Serve immediately as an appetizer or with a fresh salad.
Tips:
Work quickly with filo to prevent drying out; cover unused sheets with a damp cloth.
For extra flavor, add a pinch of chili flakes or fresh thyme to the filling.
Serve with a side of Greek yogurt dip for contrast.
