I was craving some spaghetti bolognese and so I decided to make some! Hereโ€™s how I make this delicious time consuming sauce! ๐Ÿ™‚

Ingredients:
4 ounces pancetta, diced
3 celery stalks, finely diced
2 carrots, finely diced
1 onion, finely diced
1 pound ground beef, I used 90/10
1 tablespoon tomato paste
1 cup white wine
28 ounces whole-peeled San Marzano tomatoes, crushed with hand
salt and pepper, to taste

Hello! I was craving some spaghetti bolognese recently so I decided to make some! So here’s how I make this delicious homey sauce. It does take a lot of time on the stove though… Starting off with the veggies! I like to pack em in: 3 celery stalks. I cut the stalks into thin strips. Then I finely dice them into small pieces! Now onto the 2 carrots! Cut into slices. Then into matchsticks. Then finely diced! And for the last veggie: one onion! Finely diced as well. Do you dread cutting onions? I usually don’t suffer too badly with the tears but this one really stung my eyes for some reason. I’m in love with this knife I got from my recent trip to Japan! :3 Now onto making the sauce! Heat some oil over medium heat. Then add 4 ounces pancetta and crisp it up a bit until it releases oil. Now add your diced vegetables. And season liberally with salt and pepper. Cook the veggies for a few minutes until they turn soft and translucent. Like so! Then add 1 pound ground beef. I’m using 90/10 which is very lean. Break up the ground beef. Season the beef with salt and pepper as well. Then continue cooking until the beef has browned. Now add 1-2 tablespoons tomato paste and cook it a bit. Then add 1 cup wine (I like to use white). Let the wine simmer a bit. Then its time for 28 ounces whole-peeled tomatoes from a can. I hand crush my tomatoes into the sauce. I also like to use San Marzano tomatoes as well. I don’t know if they make a difference though… haha. It’s good to season with some salt and pepper at this point as well. I like to gradually season as I go. Once the sauce reaches a boil, lower the heat to low and let it simmer uncovered for 1-1.5 hours. Be sure to give it a mix here and there to prevent burning at the bottom. Then add 1 cup milk and let it simmer for another 1-1.5 hours. Mixing along as you go. Taste the salt and adjust seasonings. Once ready, boil some pasta of choice to al dente. And then lather your delicious homey sauce onto your noodles! Some nice generous scoops. ๐Ÿ˜€ Would you like cheese with your pasta? Yes please. Say when. :3 Fine… when! Now the taste test! So delicious! ๐Ÿ™‚ I read that some people add fish sauce to their sauce for some umami which I want to try. Oooh and some others add nutmeg! Thanks for watching!     Also, often Italians will stir an anchovy or 2 into red sauce, so that's why some ppl add a splash of fish sauce for convenience (and since they're often made with anchovy) but for some reason I never liked the fish sauce substitute. Definitely give either option a try though because it does add some umami funk and complements all the sweet from the veggies and tomatoes.
    I've never done nutmeg outside of a white sauce though! I gotta give that a try.

  2. I grew up having spaghetti with red meat sauce a lot, but one year I requested a true bolognese for my birthday dinner and man oh man did my dad deliver. This makes me want to try switching up spaghetti night for my husband and I and do a bolognese style sauce next time:)
