I’ve got these fresh Ontario yellow skinned potatoes that I just picked up. Now, if you’re a real chef, you’re probably crying at watching me do this cuz these should be long single strokes as Jacques Papan would say. Okay, our potatoes are done like uh well, done like potatoes. So, they’re nice and soft. So, we’re going to start with a little bit of butter. We are now going to put in our potatoes. Love potatoes. This is a This is a mess of potatoes. So, all right. Now, we start adding in our light cream a little bit at a time and they’ll soften up nicely. Now, let’s start adding in our roasted garlic. Add the rest of our butter as well. Come on out. Come on out. Fold in our Parmesan cheese. Handy right from the garden. Fresh chives, fresh parsley. I want to add in a bit of salt and some pepper. Our potatoes are done. Beautiful.
