



I posted yesterday about smoking this 11lb brisket and wanted to update on its progress. It went on at about 8:00 PM last night and at 5:00 AM it ran out of pellets🤦🏼♀️. I cleaned it out and restocked, got it back up to temp and at 10:15 AM wrapped it in butcher paper to tuck it snug inside the cooler for the rest of the morning. Will check it out this afternoon after I get home from the doctor. Needless to say, the flame out experience when it exhausted its pellet availability certainly was discouraging, not to mention it gave hubby the perfect “I told you so” platform. I’m not losing all hope. It smells heavenly and the bark seems dreamy! I’ll check back later this evening with the cut🤤🐄🥩💨
