I can’t keep up with the vegetables. I’m doing my very best. So, today we have stuffed zucchini flowers. It’s an annual event here at our house and we love them. So, let me just show you how we make them. They’re awesome. So, let’s get started. Our stuffing ingredients are 1 cup of ricotta cheese, 1/4 cup of minced basil, a tablespoon of minced fresh rosemary, 1/4 cup of parmesano reaniano, and a pinch of salt and pepper. And we just want to mix that all together. And you see that little guy in the middle? That’s the stamon. We have to cut those out of all of the zucchini flowers. So now, let’s make our batter. We’re going to need 1 cup each of AP flour and cornstarch, a tablespoon and a half of baking soda, 2 tbsp of salt, a cup and a3 of light beer, and a cup of soda water. So now we’re going to make our own pastry bag by taking a ziploc bag and just cutting a little corner off to fill our zucchini flowers. Now we dip them into our batter and into our fryer with 365° oil for about a minute, flipping them once. When we bring them out, we want to drain them on paper towels. And there they are. Well, there you are. Stuffed zucchini flowers. They are awesome. You could serve them with a marinara or if you’re one of those, you know, ranch people.
