Today was a long, hard day, in a long, hard week and I was a few thumb twitches away from ordering a burger, but I mustered the energy to cobble this “dinner” together. Avocado on whole grain toast, with minced garlic, with roast tomatoes, olives, and some greens on the side. (I’m still kinda craving a burger, but am proud of myself nonetheless, for prioritizing nutrients.)

    Costco members: Wholly Guacamole freezes and thaws perfectly.

    I did this today too. I opened a can of black beans and scooped half into a bowl, topped with a little pepperjack and salsa, microwaved it, and then added diced bell pepper and spinach lol.
