Timing is important for texture. You CAN do it how you want in a rush, but you’ll taste the difference if you try both ways.

This soup can be made just the same in a pot on the stove in like an hour.
The crockpot method is just for convenience, it does nothing special to the potatoes. Diced frozen hashbrowns are already cooked.
For meat or things that need to be cooked through to the center and tenderized, you’d want to for sure use the crock pot. But for soups like this, there is no difference than the stove top preparation except the crockpot would cook it without it needing supervision.

You’ll be fine. It doesn’t even take 4 hours to cook potatoes. At least not in my slow cooker.

There is nothing in this recipe that has to be cooked in a slow cooker. It’s already been mentioned twice so far that it can be done on the stovetop just once, and it can. The slow cooker is a way more convenient way to cook this because once you dump everything in the slow cooker you can ignore it until done.

I make soup like this on the stove in a regular pot all the time. Once it comes to a boil it will be done in 15-20 mins

If you have an instant pot or access to one you could do these multi hour crock pot recipes in like 30 mins, tender meat and all. * I quickly read the top part of the recipe page where it said beef and started typing. Either way, if you do, this could be done in minutes or like others said under an hour on the stove. Doing it on your stove your bacon and veg would likely have better texture and likely flavour.
