Getting ready to bottle my fermented hot sauce. I'll pasturise in the bottle, and have these bottles. The plastic cork is pretty air tight. The metal cap unfortunately will twist trough and is not guaranteed airtight.

If i fill, pasturise and cork the bottle – will it be fine for long(er) term storage? Assuming i'll remove the cork once I open a bottle, they are not user friendly.

    Screw top, fermented and boiled sauces both oxidize. That bit of silicone will go flying.
