How to Make a Shortcut Khao Soi CURRY Noodle Soup | Fitous Thai Kitchen

It doesn’t get much better than Khao Soi? This creamy and spicy Thai noodle soup can be found all over Chiang Mai. Vibrant. Rich. And THAT FLAVOUR. It’s definitely got a laksa vibe to it but truth be told, for me it’s even better than laksa.
There’s thousands of versions all over Thailand utilising different ingredients, the version we have for you here is a shortcut version using red curry paste. At some point we’ll show you the version from scratch. But this will keep you going until then.

Here’s the recipe:
This should be enough for 4-6 servings, but I warn you one bowl isn’t enough, you’ll be back for more.

11 Chicken drumsticks ( you can put less, but generally you would put two in each serving)
200g red curry paste
Half tbsp curry powder
1 can of coconut milk
Some water
Quarter tbsp of salt
1 pack of preserved mustard greens
1 heaped tbsp of palm sugar ( we put another half later)
3-4 banana shallots (or any large shallots, you can substitute red onion)
Spring onion to decorate
A good quality cooking oil
Broad wonton noodles (one pack should be sufficient for 4-6 servings)
3 tbsp fish sauce (you may need to put more, we added one extra)
Optional chilli oil to add when serving
Couple of wedges of lime for each serving

As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.

Hello, welcome to FT Thai Kitchen. Today we going to make cow soy. Uh cows is the uh curry noodle soup. And uh this one from north of Thailand and uh very famous in Thailand. Okay. We the ingredient we use we use chicken uh drumstick. Three tablespoon of fish sauce, red curry paste with the curry powder, palm sugar, preserved mustard green, green lamb, sliced spring onion. Yeah. the the the noodle. You can see from the package two type of this noodle. This one the big size. Yeah. Use the big size. This one we boil and fry and coconut milk. Okay. Banana challot. Yeah. We need to slice. Okay. We start now. Yeah. First we put the cooking oil. with the medium heat and then we put curry paste. This is about 200 g. But this one not supposed to be hot curry. Have to be a little bit milder. You know, if if you want hotter, you put chili oil. Eat with the chili oil. And you fry with the curry powder. Yeah. Use the half spoon of curry powder. You fry the uh curry. Fry the paste until you get nice smell. You use the top of coconut milk from the can and the thick one bit by bit. And then you keep on stirring. The more you stir, the more you get nice smell. Okay, long enough. But we we fry curry paste with the coconut milk. Now we we put the drumstick in here. Okay. And we fry drumstick for a while until the skin have cooked. And then we add the coconut milk. And now we put uh the you know the bottom one of coconut milk. This one lighter. You can see a little bit thick. You can add a little bit of water. The coconut me have to be above from chicken. Subscribe. Okay. Uh, take your clothes off. Huh? Take your clothes off. Then unsubscribe sex cells. Yeah. Then I I get unsubscribe every day. Yeah. Become minus. Yeah. Okay. Then we just leave it. Right. And now while we waiting for the chicken cook, we slide this one. Yeah. Okay, we need to wash. We slide into small pieces. Okay. Banana challot. Yeah, we need to slice. Ah, okay. Now we waiting for the chicken drumstick cook. We can check it actually. I don’t know why you like to hold on funny. Okay. Yeah. Now we put the taste. And after put the taste then another 5 minutes. Yeah. Okay. We we put 3 tablespoon of fish sauce first. Water of salt, palm sugar. Look at the drumstick. I think only about half an hour to be cooked. Now we add another one spoon of fish sauce. A little bit more of palm sugar. Okay. In the same time we put uh we boil the water. Okay. We need to boil this noodle with the boiling water about 3 minutes. All right, we fry with the hot uh cooking oil. Okay, now the oil very hot now. Yeah, you can put that one only I think 5 seconds. But you have to turn all the time. If not, you can get burned easily. Okay, just like this. Okay, now we ready to serve this top. Okay. Now, we put the uh fried noodle on top, right? And then put the the uh preserve mustard green top uh sliced banana cherro and then sliced spring onion. You can put the piece of lamb. If you want hotter, you can have with the chili oil. This is the how the cow soy look like. Our cow soy look like we’re here again and we’re going to try cow soy. So, this is another one of my faves and a particularly good one up in Chiang Mai. Oh, this is that crunch. Let’s put a bit of lime on here. Going to make a mess with this guys. So, so lime on there. Let’s try a bit this chicken. Oh, that’s good. Oh. Oh, wow. That’s so good. M chicken is so tender, succulent, and surprisingly the the sauce has actually penetrated into it. Try some of the noodles. This is really good actually. The soup is amazing. Spicy, crunchy. It’s actually spicy enough. I didn’t need to put any chili at all. And give this a go at home.
