Minestrone Soup – even in the summer! Many of you will think I’m a terrible mum for feeding my kids hot soup in 40C summer heat. But let me tell you the reasons why…

All summer long my kids adore to fill up on pizza, pasta and focaccia and I couldn’t be happier for them to enjoy these Italian traditions. But I always do a bowl of hearty minestrone a week to make sure they are tanking up on their fibre, vitamins and nutrients. And a bowl of minestrone packs that perfect punch! PLUS, I can throw in any veg that is getting past its best keeping our waste (in our family of 17) to a minimum. It’s cheap and soooo simple to make. Especially if blended smooth as you don’t even need to worry about chopping the veg super fine.

Basic Recipe (more tips below this recipe):
✅ Boil a large pan of water and bring to the boil
✅ Roughly chop up your veg (I recommend carrots, squash, celery, leeks, courgettes, onions). Limit potatoes, cauliflower and broccoli as it can make the texture very thick.
✅ Add the veg to your water along with 1 stock cube, a tin or two of chopped tomatoes and I love a squeeze of @ortolina_rodolfi but if you don’t have any tomato puree will do.
✅ Reduce to a simmer and cook until veg is soft (approx 30-40mins)
✅ Season with salt and pepper and blend to your preferred texture

TEXTURE
Us adults like the soup unblended but to enjoy this you do need to chop the veg small – takes more time. Or blend smooth

To serve we add some pastina (mini pasta shapes @barilla have lots of different shapes but my fav is stelline). I cook the pasta separately in boiling water or stock and drain it, running it under cold water to stop it over cooking. Then I add this to the hot soup depending on who likes it.

Always sprinkle grated @parmigianoreggiano on top and a drizzle of extra virgin olive oil is delish too!

Throw in all your vegetables into a pan of boiling water. Adding a few Italian essentials like orina, pastina, and dadd. You can eat the minestron with whole vegetables or you can blend it fine, whatever your family prefers. My favorite way is using my nonas pasta verdura because it keeps a little bit of texture without it being super smooth.
