Make a roux with olive oil and flour, add vegetable broth to it and reserve. Then sauté a trinity of onion, celery and green bell pepper in olive oil. Add garlic and Cajun spices. Add a can of fire roasted tomatoes, the roux and bay leaves. Simmer to let the flavors combine. Stir in some okra, cook 10 minutes, then add shrimp and sliced chicken andouille sausage. Cook another 5 minutes. Stir in filé powder and serve.
