🍄 Creamy Balsamic Mushroom Pasta 🍝

6 plant groups in one meal 🌱

Recipe  

  • 8 oz whole-grain pasta  
  • 16 oz mushrooms, sliced  
  • 1 tbsp olive oil  
  • 3 handfuls spinach  
  • Black pepper

Balsamic Sauce  

  • 1 cup silken tofu  
  • 1 cup unsweetened plant milk
  • 2 tbsp nutritional yeast  
  • 2 cloves garlic, minced
  • 1 tbsp balsamic vinegar  
  • 1 tsp thyme  
  • 1 tsp salt  
  • ½ tsp rosemary  

Steps  

  1. Blend sauce ingredients.  
  2. Sauté mushrooms in oil until nearly done (3–6 min).
  3. Pour sauce into the pan. Simmer 5–7 min uncovered (if too thick, add milk or veggie broth).  
  4. Cook pasta in salted water.
  5. Add spinach to the sauce and let it wilt.  
  6. Toss pasta in the sauce until coated.  
  7. Serve with black pepper.
