On October 11, 2025, Enzo’s Hideaway at Disney Springs hosted a special dining experience called The Mindful Midday Pairing Event. I had a chance to preview the event, courtesy of the nice folks in Enzo’s media relations team.
This elegant afternoon combined the bold flavors of Italian cuisine and the innovation of zero-proof beverages from the leading non-alcoholic spirits brand, Aplós.
Aplós (which means “simply” in Greek) is a high-quality non-alcoholic beverage brand offering zero-proof drinks that combine the taste and experience of cocktails without alcohol. Their lineup features unique options like Arise, which is enriched with adaptogens, alongside convenient canned mocktails. Three Courses of Culinary Creativity
Enzo’s presented a thoughtfully designed three-course Italian meal, where every dish was crafted to highlight seasonal ingredients and classic Mediterranean techniques. Each course is expertly paired with a distinct Aplós-based drink, designed to complement the flavors of the food without the use of alcohol.

First course: Antipasto
Drink: Americano – Aplos Arise, housemade hibiscus bitter, zero proof sweet vermouth
Food: Porchetta Con Insalata – Crispy porchetta, arugula, fennel, citrus, white balsamic, and tangerine extra virgin olive oil
Main course: Primo
Drink: Coriander Sky – Aplos Arise, lemongrass ginger tea, coriander agave syrup, orange blossom water, acid adjust lime juice, ginger soda
Food: Lumache Alla Vodka Con Gamberi – Housemade pasta, grilled shrimp, tomato cream, ‘nduja, parmigiano-reggiano, and salsa verde
Dessert: Dolce
Drink: Desert Bloom – Aplos Calme, salted watermelon juice, hibiscus mint syrup, lime juice, ginger shrub, cardamom bitters
Food: Melon Shaved Ice And Mint

The event was both educational and delicious. It creates an environment where you can learn about and try non-alcoholic spirits, and enjoy unique, tasty drinks specifically designed to complement the high-quality food offerings that make Enzo’s Hideaway famous.
Enzo’s will continue to refine the food and drink menu as they look ahead to dry January, where many people accept a personal challenge to reduce or eliminate alcohol after the busy holiday season.
