Ingredients

6 cups boiled chickpeas (or canned chickpeas, rinsed)

1 large onion

1 red carrot

1 English cucumber

1 clove garlic

10 dates, pitted & chopped

15 pistachios, roughly chopped

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon ginger powder

1 teaspoon red chili powder

1 teaspoon cinnamon powder

1 teaspoon black pepper

1 tablespoon olive oil

3 teaspoons fresh lemon juice

2 tablespoons cilantro (coriander) leaves, chopped

Salt, to taste

How To Make Moroccan-Spiced Chickpea Salad

Wash and chop the onion, cucumber, garlic, carrot.

Pit and finely chop the dates. Chop cilantro leaves.

In a large bowl, add chickpeas. Then add onion, cucumber, carrot, dates, and cilantro.

Drizzle in olive oil and lemon juice.

Sprinkle all the spices (turmeric, cumin, ginger, red chili, cinnamon, black pepper) and salt.

Gently toss everything so it’s evenly coated and mixed.

Serve right away, or let it sit for about 30 minutes for the flavors to meld.

Store leftovers in the fridge.
