My doctor recommended I start a Mediterranean/anti inflammatory diet (and then unhelpfully tacked a three page faithbased weightloss plan to my report. I’ve been trying to work more veggies and less sugars into my day while i find recipes that work for me.
The kicker here is
1) my partner hates tomatoes
2) as of this week, i know i am dreadful allergic to salmon (after eating it two nights in a row. Currently on day 9 or reaction and day 3 or steroids…)
What are some tasty, quick meals, beyond a tuna sandwich or a lump of cherry tomatoes? Thank you in advance! Here’s some pics of what I’ve been cooking for myself between pizza and takeout lol

What foods do you like? Choose a couple from each of these categories:
Veggies (choose 2-3): lettuce, broccoli, cabbage, carrots, beets, kale, spinach, tomatoes
Protein (2): Greek yogurt, hummus, beans, tofu, chicken, tuna
Grain (1): brown rice, quinoa, oats, farro, whole wheat bread
Toss everything together into a salad and season. You have infinite possibilities and combinations.
Honestly, that all looks really good! Especially the 2nd slide with the naan, I would eat that so fast.
Just remember that you don’t have to stick to foods from the Mediterranean region to adhere to the Mediterranean diet. Many Asian dishes fit, and you can find a lot without tomatoes, or that use tomatoes so they aren’t overwhelmingly noticable. Many different protein options as well.
Faith based??? Throw the whole “doctor” I the trash.

I recommend tinned fish for insanely easy and healthy. You can get smoked trout at Trader Joe’s and that’s a great entry point if you’re unsure. Ortiz tuna (packed in Portugal) is really really good too.
Combine these with some cooked or raw veg and whole grain toast, brown rice, or farro.
You can also eat tofu raw if you want easy non-seafood options. And ALL the beans.
