It looks like maybe its chopped up sirloin but I’m guessing and could be completely wrong. Any ideas as well as how to prepare it like this?

    Almost impossible to say, that could basically be any beef steak meat.

    As for cooking it I would’ve said melt a load of sugar in hot oil then throw your steak in for a nice crispy brown coating on the outside but I guess from the context this is a keto recipe and that’s a keto no-no. You could airfry it or just fry it in a good bit of very hot oil/butter/natural fat to do that. Just be patient and it will brown.

    Get a pan really hot. Add tallow. When the tallow is smoking hot, add chunked steak. Brown it hard.

    Looks like honey sesame beef. I spy sesame seeds and a shiny coating… but I could be wrong. It could also be teriyaki beef, or any other number of Chinese-style beef. I can see why you wanna make it though, looks baller. 💖

    Looks like pork carnitas to me. Pork shoulder chunks deep fried in lard, basically. A New Mexican traditional dish. Lard, Mexican coke, and sometimes cream or evaporated milk in a cast iron pot and deep fried pork. Look up a recipe for details.

    It honestly looks just like chislick. (Deep fried elk with onion salt). A delicacy in the north central states.

    A Klingon delicacy made up short cuts of Targ deep fried in blood wine.

  8. This isn’t how the pic is prepared but 100% will be much better. Especially more tender. Grab a chuck eye, flank, skirt, sirloin something like that, get as much marbling as you can find. Cut the cubes into pieces slightly bigger than you wanna eat.

    Weigh the meat in grams. The .5% of that (not 5%) and add that in baking soda. 1 tsp soda is 5g. You can use that to eyeball. Now add 1% salt, a pinch of sugar, pinch msg, pinch of cornstarch and a splash of oil or lard. Mix and set aside for 20 min.

    Heat pan over medium high and add oil to totally cover the bottom. Fry the pieces, don’t worry about overcooking, it won’t go dry and tough. Just get decent color. This will make the best steak bites if your life.

    I can’t say for sure, but take a look at how to, “velvet beef.”

    For tougher cuts, I’ll do a soy sauce and butter marinade and then velvet. Turns out very similar to your picture.

    Looks like whatever left over steak from yesterday fried up from the morning time that’s how I do steak and eggs. Always pre slice and dice the chunks before frying

    I couldn’t tell you the cut, but I believe they used a marinade that was high in sugar content based on the bark.

    Looks like beef, double cooked.

    Make a medium/rare steak normally on high temp, let it cool, chop it in pieces and fry again. Looks like they have added some sugary sauce too for a quick char.

    Perfect for a leftover that lacked the tenderness the next morning.

    Barbacoa it’s beef braised, cooked then pan seared with a sauce. Most likely brisket.
