    Where are you from? This reminds me of an “onion stew” my uncle used to make. He was a southwest Louisiana Cajun. He’d cook down a ton of onions, then make a roux from the cook down and then add water and the meat/veggie ingredients for a stew. It was not bad.

    France Onion Soup! My kids wait all year until I make this in the Fall. Such a great dish. I made it last weekend.
