This one’s packed with tomatoes and peppers, which you combine with aromatics and seasonings and roast until nice and jammy. This gives you time to make some crispy garlic parmesan croutons, which make the perfect topping. I love infusing my stock with fresh basil because you get all of the flavor without changing the color of the soup. Blend it all together, season to taste, and you’re pretty much good to go. Add your croutons, some optional basil oil, and some more parmesan. Then tuck in and enjoy.
