Ingredients
➡️ 22-25 phyllo sheets (450gr)
➡️ ¼ cup butter
➡️ ⅓ cup olive oil
➡️ 8oz / 220gr feta cheese
➡️ 4oz / 110gr cheddar cheese
➡️ ½ cup / 125gr ricotta cheese
➡️ ½ cup / 125gr Greek yogurt
➡️ 2 eggs
➡️ ½ teaspoon freshly ground black pepper

Add 220gr of crumbled feta cheese to a bowl. Add 125gr of ricotta cheese to the bowl. Add 110gr of grated cheddar or hard cheese to the bowl. Add 125gr of Greek yogurt to the bowl. Add 2 eggs and some freshly ground black pepper. Add ⅓ cup of olive oil to a small bowl. Add ¼ cup of melted butter to the bowl with the oil. Brush 3 phyllo sheets with the oil mixture and place them at the bottom of the tray as shown. Repeat the same 4 more times (total 5 of folded accordion phyllo sheets).
