If you’re someone who struggles with low iron levels like me, you are going to want to be making the salad on repeat. My ironrich spinach lentil salad comes together quickly is packed with tons of flavor and plant-based iron rich ingredients. The dressing gets made first right in the bowl using olive oil, lemon juice, orange juice for extra vitamin C, which helps with iron absorption, apple cider vinegar, maple syrup, and don mustard. Give the dressing a good mix. And then we’re going to add in all of our iron rich ingredients including lentils, quinoa, spinach, and then some carrots for more vitamin C along with red onion, pumpkin seeds, and dates, which are both very high in iron. Then give the salad a really good mix until all the ingredients are combined and coated with the dressing.
