


Second time smoking ribs on my pro22. Bought a whole spare rib and trimmed to St Louis style. Decided to foil boat this time instead of fully wrapping or letting them go. Let it ride at 250 until internal of 175-180, foil boat with 2 layers and some butter, brown sugar, and a sprinkle of rub. Coat in sauce/butter mix, return to grill at 275 until it reached 200-203 internal temp, rest for 30 min. Nice bite, not falling off the bone, but you can still pull a bone cleanly with some effort. I love this grill.
