مقلوبة (Maqluba). Maqluba is a traditional Palestinian meal that is one of my favorites! Maqluba is flavorful rice layered with chicken or lamb, and fried vegetables. It is served flipped upside down and gets its famous appearance from being upside down!
Maqluba originated in Palestine. But today, it is popular in many regions of the Middle East, each with their own version of maqluba.
Ingredients
chicken-2 kg
For Maqlooba spices:
Black pepper-1.5 tsp
coriander-1.5 tsp
Fennel 1.5 tsp
cumin seed-1.5 tsp
kashmiri chilly-10
dry lemon-1
cloves-8
Green cardamom-10
cinnamon sticks-2 -3 pieces
Dry roast the spices and make powder and set aside.
First marinate the chicken with Maqlooba spices and salt and refrigerate for 2 hours or overnight.
eggplant- 1
Large potatoes 3-4
onion -1
tomato -1
Green and red pepper -1
Salt to taste
Tomato paste 1 tbsp
Stovetop Method : Add spice masala and tomato paste to the chicken and add water along with salt and cook the Chicken for 25 min first then brush the remaining masala and broil for 4 min
Instant pot Method : Cook the chicken in the instant pot for 5 min and then remove the chicken and brush more spice mix and broil for 4 min and set aside.
Basmati rice -4 cups (soaked for 20 min)
water -7-8 cups
STEP 2 BAKE OR FRY VEGETABLES FOR MAQLUBA
* Slice the eggplant and potatoes into ¼ inch slices.
* Place the sliced to potatoes to bowl of iced water and then drain and pat them dry with paper towels
* Place the eggplant onto a plate Sprinkle with salt. Once there are water droplets on the eggplant, pat them dry with paper towel.
FOR BAKED MAQLUBA VEGETABLES:
✅Line 2 large baking sheets with parchment paper. Next, add the sliced vegetables. Brush the vegetables with spices and oil mix.
Bake in the oven at 400 degrees Fahrenheit for 30 minutes or until they are golden brown for a healthier Maqlooba option.
✅Toss the meat with the maqluba spices to coat the meat. Add 7-8 cups water to cover the meat. Cover the pot with a lid and cook on low-medium for about 25 minutes until the chicken is cooked through.
✅Turn off the heat and transfer the chicken pieces to a sheet pan and brush them with a mix of Maqlooba spice and olive oil. Broil it for 3-4 min and set aside.
✅add a sheet of parchment paper to the bottom of your pot to help prevent the maqluba from sticking.
✅Bake or Fry the vegetables (eggplant and potato )and spread them on the bottom of the pan. Place the chicken on top and layer rice and slowly pour the stock over without disturbing the rice.
✅Turn the heat on high until you hear the water boiling. Fluff the rice a little bit, then cover your pot with a lid.
✅Cover and Cook for 30 min on medium flame.
✅Once it is done, turn off the heat and let the pot rest, covered, for about 15 minutes.
✅Place a large serving pan on top of the Maqluba pot as if you were replacing the lid.
✅Quickly flip the pan upside down holding the bottom of the pot and the serving platter. You will probably want to ask someone strong to do this! Tap the top and sides of the pot to loosen up all the pieces.
✅Remove the pan and watch your Maqluba be revealed! Sprinkle pine nuts and chopped parsley, serve with your favorite salad.
[Music] Hi everyone, welcome back to Refina’s Kitchen Corner. Today’s video I’m going to share chicken makluba. Makluba is a traditional Palestinian meal that is one of my favorites. Makaloba is flavorful rice laid with chicken or lamb and fried vegetables. It is served flipped upside down and gets its famous appearance from being upside down. Makluba originated in Palestine but today it is popular in many regions of the Middle East each with their own version of makluba. [Music] In this video I’m sharing the healthier and faster makluba. Traditionally they fried the vegetable. Here I am baking the vegetable instead of frying. [Music] First we are going to make the makluba spice powder at home. For this I’m using two large cinnamon sticks. If you have a small one you can use three. Green cardamom 10 dried lemon one. 10 cloves and 1 and 1/2 teaspoons of coriander, cumin, black pepper, corns and fennel seeds. Add 10 Kashmir whole chilies and dry roast them and make a powder and set aside. [Music] For this recipe, I’m using whole chicken 4 lbs. Cut it into big slices. And then I’m adding 2 tablespoons of the Mluba spice mix which we prepared. And add salt to your taste. Rub it well. And you can marinate this chicken maybe a day before uh like overnight or if you don’t have much time you can at least marinate for like 1 hour prior to the cooking. I’m cooking the chicken in the Instant Pot. Adding 7 cups of water. 1 tbsp tomato paste. Dry lemon one. 2 tablebspoons of the makluba spice mix, salt to your taste, and two cubes of Maggie. Mix it well. Now you can place the marinated chicken in the water and cook it like 5 minutes. Alternatively, you can cook this in the stove top for like 25 minutes. [Music] Meanwhile, we can slice the potatoes and put it in the iced water. And just slice the eggplant and sprinkle some salt and keep it aside. In a bowl add 2 tbspoons olive oil and half tablespoons of the mluba mix and whisk it well. Pat the potatoes and egg pan with a paper towel. Line two large baking sheets with parchment paper. Next, you can add the sliced vegetables and brush the vegetables with the spices and oil mix. And you can bake it in the oven at 400° F for 30 minutes or until they’re golden brown for a healthy makuba option. Halfway, you have to flip the vegetables and you can add one sliced onion, tomatoes, and peppers. Now our chicken is ready. You can transfer the chicken to a sheet pan and then uh you can brush the chicken with the makuba mix and then broil it for 3 to 4 minutes. [Music] Now our chicken and all the vegetables are ready. Now it’s the time to layer them. [Music] You can grease the heavy bottom pan and add a sheet of parchment paper to the bottom of your pot to help prevent the makluba from sticking. Now you can layer the baked vegetables first. First I’m putting the eggplant. Spread them on the bottom of the pan. [Music] Now add the baked or fried potatoes. You can even use the cauliflower if you like. [Music] Now add tomatoes, onions and peppers. [Music] Now you can place the chicken on top. [Music] For this recipe, I’m using four cups of basmati rice soaked for 20 minutes and drained. Now you can layer the rice on top of the chicken. [Music] Now you can slowly pour the stock over without disturbing the rice. The broth should sit about half in over the rice. For this recipe, I’m using 7 cups of water for four cups of rice. Turn the heat on high until you hear the water boiling. Then you can cover and cook 30 minutes on medium flame. Once it’s done, you can turn off the heat and let the pots rest covered for about 15 to 30 minutes. [Music] Place a large serving pan on top of the makuba pot as if you were replacing the lid. Quickly, you can flip the pan upside down holding the bottom of the pot and the serving platter. You will probably want to ask someone strong to do this. Tap the top and the sides of the pot to loosen up all the pieces. Then you can remove the pan and watch your makluba revealed. Wow, look at that. How neat and clean it came. Finally, you can garnish with some chopped parsley and nuts and you can serve it along with your favorite salad. [Music] Finally, it’s time to toast the rice slowly. Each family has its own touch, I was taught from my Palestine mother in law that tomatoes is kepsy. As an American I don't like the heavy all spice kick, but I use Lipton onion soup mix and to this day my in-laws can't figure out my secret touch lol.
