My grandma is 81 and thriving. She loves to meal prep. Let’s make her favorite meal prep recipe. It’s a vegetarian, high protein, and really delicious. This goes in are the chickpeas. Smash them up. Yeah, I smash them almost all. I leave a little chunky. Little bit of tahini, splash of apple cider vinegar, a tablespoon of mustard, marinated artichokes. We don’t put oil in this salad because there’s oil in the marinade of the artichoke. Olives, onion, salt and pepper. Toss, toss, toss. We like to serve over sourdough toast with some micro greens and a drizzle of extra virgin olive oil.

  1. I am not a vegetarian. Straight up carnivore, but I will try this. I do not mind some vegetarian dishes when I’m feeling too bloated to have heavy meats. Thanks Nonna!
