Ingredients: 1 and 1/2 cups almond flour half a cup coconut flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt half a cup unsalted butter softened 1 cup granulated sweetener such as arythrtol for eggs 1 cup whole milk ricotta cheese one teaspoon vanilla extract zest of one lemon juice of one lemon instructions one preheat oven. Preheat the oven to 350° F, 175° C, and grease a cake pan. Two, mix dry ingredients. In a bowl, combine almond flour, coconut flour, baking powder, baking soda, and salt. Three, cream butter, and sweetener. In a separate bowl, cream together the softened butter and granulated sweetener until light and fluffy. Four, add eggs and ricotta. Beat in the eggs one at a time. Then mix in the ricotta cheese, vanilla extract, lemon zest, and lemon juice. Five, combine mixtures. Gradually mix the wet ingredients into the dry ingredients until well combined. Six, bake. Pour the batter into the prepared cake pan. Seven, bake. Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Eight, cool and serve.
