I’ve learned how to brown my butter, cook pasta risotto style….my baking skills and confidence elevated because of you. It’s nice when we come full circle again lol cheers to you and Chuck and Gus!

  4. I make a risotto dish that’s very similar using corn stock that I make from boiling the cobs after I cut the kernels off. In an ideal world I could replace all of the cream with the milk that comes out of the corn for the ultimate fresh summer taste but I’m not sure how to actually accomplish that

  8. Honestly, if you make just one recipe from the book, make this. The butter and shallots and sweet corn… I’m making it for the third time tomorrow before corn season is over.
