Healthy Spinach Strawberry Salad

Ingredients

130g (4. oz) pecan nuts
1 red onion
450g (1 lbs) strawberries
285g (10oz) fresh spinach, baby spinach or arugula
60 ml balsamic vinegar
3 tbsp extra virgin olive oil
1,5 tbsp chia seeds
1,5 tbsp lemon juice
1/2 tsp Dijon mustard
1,5 tbsp honey
1/2 tsp salt
1/4 tsp pepper
200g (7 oz) feta

Method

1. Place a frying pan over medium-high heat and roast the pecan nuts until golden brown. Toss occasionally.
2. Cut the red onion into thin slices.
3. Halve or quarter the strawberries.
4. Coarsely chop the spinach.
5. In a small bowl, combine the balsamic vinegar, extra virgin olive oil, chia seeds, lemon juice, Dijon mustard, honey, salt, and pepper.
6. Place the spinach, strawberries, red onion slices, and the dressing in a large bowl and mix well.
7. Crumble 3/4 of the feta over the salad and add 3/4 of the pecans and toss to combine.
8. Finally, sprinkle the remaining feta and pecans over the salad.
