    Ingredients (Serves 8–10):

    • 2 pounds smoked beef brisket

    • 2 Anaheim chiles, roasted, peeled, chopped

    • 2 poblano chiles, roasted, peeled, chopped

    • 1 red bell pepper + 1 yellow bell pepper, diced

    • 1 jalapeño chile, seeded and minced

    • 2 yellow onions, diced

    • 5 cloves garlic, minced

    • 1 tablespoon olive oil

    • 2 tablespoons chili powder

    • 1 teaspoon smoked paprika

    • 1 teaspoon sweet paprika

    • 1½ teaspoons ground cumin

    • 1 teaspoon ground coriander

    • 1 teaspoon granulated garlic

    • 1 teaspoon granulated onion

    • 1 teaspoon smoked salt (adjust to taste)

    • 1 teaspoon coarse black pepper

    • 1 tablespoon brown sugar or honey

    • 2 cups San Marzano tomato sauce

    • ½ cup tomato paste

    • 1 cup beef stock

    • 8 ounces dark beer

    • One 15.5‑ounce can kidney beans

    • One 15.5‑ounce can pinto beans

    • ½ cup charred corn

    • 1 Parmesan rind (2–3 inches)
