🥗 BLT (Bacon Lettuce Tomato) Chicken Salad with Pesto Dressing

🌿 Ingredients:
• Iceberg lettuce (chopped)
• Baby plum or cherry tomatoes (halved)
• Diced avocado
• Finely chopped red onion
• Grilled chicken (sliced or shredded)
• Crispy bacon bits
• Salad cheese (like feta or white cheese)

🥣 For the dressing:
• 2 tbsp light crème fraîche (or Greek yogurt)
• 1–2 tbsp green pesto (pesto Genovese)
• 1 clove garlic, freshly pressed
• Salt and black pepper to taste

👩‍🍳 Instructions:
1. Prepare the chicken:
Grill the chicken with a little olive oil, salt, and pepper until golden and fully cooked. Let it cool slightly, then cut or shred into small pieces.
2. Cook the bacon:
Fry the bacon in a dry pan until crispy. Once cooled, crumble or chop it into small bits.
3. Assemble the salad:
In a large bowl, combine the chopped lettuce, tomatoes, avocado, red onion, grilled chicken, and bacon. Sprinkle the salad cheese on top.
4. Make the pesto dressing:
In a small bowl, mix together crème fraîche, pesto, garlic, salt, and pepper until smooth and creamy.
5. Serve:
Pour the dressing over the salad and toss gently, or serve the dressing on the side so everyone can add as much as they like.

💡 Tips:
• Add a splash of lemon juice or olive oil to the dressing if you prefer it thinner.
• For a lighter version, you can skip the bacon or replace it with crispy turkey or toasted bread cubes.
• Perfect for a quick, healthy lunch or light dinner!
