Around The World in 80 Cakes – Turkish/Mediterrean Revani
This cake is popular across the Mediterranean and Egypt, not just Turkey so it seems. And you know what, I can totally see why. I am SOLD.
What I loved about this cake is there’s no gazillion layers, no fancy frosting, no method consisting of a million steps. It’s just an easy to bake, quick to make, get it in your belly, happy days sort of cake and it’s definitely won me over.
Fruity, fresh, summery and addictively sweet. The texture of this reminds me of an Indian sweet I grew up gobbling called Gulab Jamun – if you know about that cakey, syrupy, sugary goodness, then you will KNOW this is legit.
I tweaked w the ingredients and quants from the recipe I followed (Recipe Credit: My Greek Dish) but went with the same method.
The base ingredients I went with and what you’ll need to make this are:
• Sponge
4 Large Eggs, separated
225 g Unsalted Butter, room temp
350 g Caster Sugar
90 g Plain Flour, sifted
60 g Potato Starch, sifted
1 tsp Baking Powder
100g Semolina
85 g Desiccated Coconut
Zest of 3 Small Oranges
• Syrup
300 g Caster Sugar
350 ml Water
Juice of 2 Small Oranges
1 tsp Vanilla Bean Paste
• To Finish
Crushed Pistachio
➡️ I then baked it at 180C for 32 mins on the middle shelf and poured over hot syrup whilst the cake was still warm.

I made the 67th best rated cake in the world. Delicious. Welcome back to Around the World in 80 Cakes, where I make the top rated cakes in the world. In at 67 is a cake popular across the Mediterranean, a Ravani cake. It’s up for debate where exactly this cake is from, but whoever is responsible for this delicious filth, I want to thank you from the bottom of my greedy goblin heart. It’s a light semolina based cake which is then drowned in a citrusy sugar syrup and topped with a pistachio crust. This really is simple, basic baking done basically to perfection. Get it saved and get it made. I’m sorry. What? Excuse me. Yum. Major major yum. Yum. Yum. Levels are off the charts. It’s really light. Really delicious. Super moist. This is basically like summer in a mouth. Summer in your mouth. The suaree in my It’s like a bite of summer. It’s like a bite of summer. Ticks all the boxes for me. Orange, yes. Coconut, yes. Pistachio, yes. Sponge, yes. Yum, yes. My advice to you, make it, bake it, scoff it. Don’t share it. It’s too good. I mean, sure, share it if you’re nice.

It is a Greek cake not Turkish
I've had this, but maybe I haven't had a good one. I wasn't too big of a fan. I also don't like pistachios too much. But of course, taste is subjective. There are tons of people who love it. Keep it up!
if you google revani, it shows basbousa. which is another middle eastern dessert with semolina but it looks so different and doesn't have citrus. im so confused, but either way it looks delicious.
