Recipe: 2 – Classic Pavlova Recipe: Strawberry, Kiwi & Passionfruit »

I love kiwi fruit and often we just eat golden kiwi fruit fresh but you can also cook with it. I’m not a huge eater of green kiwifruit preferring golden over green but green kiwis work great in recipes! Try a quick and easy microwave apple kiwi jam that comes together in minutes using just four ingredients. For something iconic, there’s the classic pavlova topped with the holy trinity of pavlova fruit: strawberries, passionfruit and kiwifruit. Beat the heat with sweet summer popsicles made with Pimms, lemonade and fresh fruit, or whip up a coconut fruit flan with peaches, raspberries and kiwi fruit for a delicious take on the French tart. And if you’re in the mood for a showstopper, my favourite French fruit tart is a custard-filled beauty topped with shiny, glazed fresh fruit.

The kiwifruit jam is a game changer as it can be done in the microwave. Seriously, you need to try microwave jam at least once. It’s just four ingredients: kiwi fruit, apples, sugar and lemon or lime juice!

The only time my parents would buy kiwifruit when we were kids was to top a pavlova. And seriously all you need is the holy trinity of pavlvoa fruit: strawberry, passion fruit and kiwi fruit to create a classic Australian pavlova!

This is for those of you who are sweating through summer right now (I’m so envious!). These sweet summer popsicles are spiked with Pimms and made with fresh fruit and lemonade. They’re so simple but so perfect for cooling down!

I call this my Australian version of a classic French fruit tart! This uses fresh fruit like kiwi fruit, white raspberries, red raspberries and peaches for a summer time tart made with coconut custard. It can also be made in parts if you’re time poor!

I had to include my favourite French fruit tart. This is a classic tart that is made with delicious custard, a crisp pastry base and lots of fresh, glazed fruit on top! And the green from kiwi fruit gives this a gorgeous colourful contrast to the berries and apricots.
So tell me Dear Reader, do you use kiwifruit in recipes or do you eat it as it is?
