One pan lemon chicken
Ingredients
Chicken marinade
– 4 chicken thighs
– 4 chicken drumsticks
– 2 tsp olive oil
– Zest from 2 lemons
– Salt
– Pepper
Rice
– 2 onions, chopped
– 2 tsp olive oil
– Zest from 2 lemons
– 1 cup rice
– 1 l chicken stock
– 1 lemon, halved
– Salt
– Pepper
Salsa
– 5 g Dill
– 5 g Parsley
– 10 Olives, pitted and diced
– 2 tsp Chilli infused olive oil
To serve
– Full fat greek yogurt
Method
1. Marinade the chicken in the olive oil and lemon zest for 20 minutes to 1 hour.
2. Pre-heat the oven to 180°C.
3. Combine the onions, olive oil and lemon zest in an oven tray and place in the oven for 10 minutes.
4. Place the chicken in the oven tray on the onions.
5. Pour the rice in between the chicken.
6. Pour the stock over, ensuring the chicken and rice is covered.
7. Season with salt and pepper
8. Place the halved lemon in the dish and cover before cooking for 40-50 minutes.
9. While the chicken cooks combine the salsa ingredients.
10. Squeeze the lemon juice from the oven baked lemon into the salsa.
11. Serve the chicken on a layer of yoghurt with the salsa on top.
12. Enjoy!
