
The beans on the left canned perfectly fine I think, plenty of liquid in the jars and no smooshed beans. The two on the right are a complete hot mess. Same batch of beans, both packed 2/3rds of the way full and processed at 75 mins after soaking 12 hours and boiled for 30 per my approved canning books.
What did I do wrong, and are they okay to eat? I have around 5 with a concerningly little amount of liquid in the jars. I've never canned beans before, please be kind😂🤦🏼♀️

What recipe did you use?
The ones that are wonky, I use for retired beans… they are great!
So are these safe to eat? Not going to lie the lack of liquid is freaking me out lol.
Beans soak up water when they expand. If they are sealed when you remove rings, they’re fine.
