The beans on the left canned perfectly fine I think, plenty of liquid in the jars and no smooshed beans. The two on the right are a complete hot mess. Same batch of beans, both packed 2/3rds of the way full and processed at 75 mins after soaking 12 hours and boiled for 30 per my approved canning books.

What did I do wrong, and are they okay to eat? I have around 5 with a concerningly little amount of liquid in the jars. I've never canned beans before, please be kind😂🤦🏼‍♀️

    The ones that are wonky, I use for retired beans… they are great!

    Beans soak up water when they expand. If they are sealed when you remove rings, they’re fine.
