   Some of my favorite meals have looked like dogfood, honestly. This is pretty nice plating.

    That looks like an interesting way to cook sliced potatoes. Can you elaborate on how?

    Just let it sit in the pan, flip/ shake/ whatever? Any added fluids? Do you blanche the potatoes first?
