    Aren’t those slices of pork loin? I always thought chops had a bone? We prefer end cuts where the bone is near the center… Korean BBQ style with sticky rice. It screams autumn!

    Just got a couple of 1″ thick chops for $5. Going to be grilling them this weekend and have some stuffing and fried potatoes with them. Mmmmmm

    Year round, especially good heritage chops.

    Fall is when I serve them with squash and wild rice though.

    I love pork chops, but not the factory farmed, white pork type that you find at typical chain grocery stores. This appears to be the type that you have. If you want to blow your mind, try and find some heritage pork somewhere in your area. The kind where the pork is deep red, like it used to be before giant corporations bred the red out. It’ll be the best pork you’ve ever had.

    Try to find some heritage pork. Local if possible. for the record I’m NOT knocking your food that shit looks amazing. Heritage hogs that are pastured – changes the entire meat game

    Yes, 1.5 to 2in chops, brined salt/sugar overnight, dry rub, glaze and grill em up.
