Crispy Chicken Caesar Wrap, your go to meal this summer!

Wet Mix
10 chicken tenderloins
500ml buttermilk
2 tsp salt
½ tsp cracked black pepper
2 tsp paprika
2 tsp garlic powder
2 tsp onion powder

Dry Mix
1½ cups plain flour
1 tsp salt
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder

Caesar Dressing
½ cup mayonnaise
1 garlic clove
2 anchovy fillets
¼ cup Parmigiano
¼ tsp cracked pepper
Juice from half a lemon

Bacon pieces
Cooking oil

Method
In a large bowl, whisk together the buttermilk, salt, pepper, paprika, garlic powder and onion powder. Add the chicken tenderloins, mix to coat well, cover, and let them marinate in the fridge for at least an hour or overnight for extra tenderness.

For the coating, combine the flour, salt, paprika, garlic powder and onion powder in a shallow bowl. Lift each tender from the buttermilk, letting the excess drip off, then coat well in the flour mix.

Heat oil to 180°C and fry the chicken in batches until golden and crispy, about 3-4 minutes depending on thickness. Transfer to a wire rack to stay crisp.
For the dressing, blend mayonnaise, garlic, anchovies, parmesan, lemon juice, and cracked pepper until smooth and creamy. Chop lettuce then dress with dressing.

To assemble, layer your wrap with dressed lettuce, crispy bacon, and the fried chicken tenders.Tuck in the sides then roll tight. Cut then serve.

And thanks to my new higher fridge, I’ve got filtered water and ice straight from the door to wash it down. Now, if you’re like me and love cooking, my fridge is always packed. That’s where the switch zone feature comes in handy. You can switch from freezer to fridge whenever you need, so you can create ideal conditions for different foods. Homemade Caesar dressing has to be one of my favorite condiments. Simple ingredients, but so good. When you’re ready to cook, heat your oil to 180° C. I’m using Hire’s induction cooktop. It only heats when a pot or pan is on the surface, so less heat is wasted, making it more energy efficient. With the cooktop’s precise temperature control, you get consistent, accurate heat every time, keeping you in control of your cook. Dress your lettuce. Add a little more cheese.
