Upgrade of an old fave of mine. This dip is simply addictive! Used my favorite cooking oil from @latourangellelife —the ONLY ones I use: highest quality & delicious!

*serves 4-6*
1 tbsp cornstarch
2 tsp cumin
1 tsp paprika
1 ½ tsp dried oregano, divided
1 tsp salt, divided
1 head cauliflower, broken up into small florets
1 15-ounce can chickpeas, rinsed and drained
3 tbsp La Tourangelle Avocado Oil
2 handfuls baby spinach
⅓ cup jarred roasted red peppers, drained
6 tbsp tahini
1 tbsp lemon juice
Pepper
⅓ cup chopped red bell pepper
¼ cup chopped red onion
¼ cup sunflower seeds
¼ cup chopped fresh parsley
2 tbsp chopped fresh dill
2 tbsp capers
Honey, for drizzle, optional
Tahini, for drizzle optional

1️⃣Preheat the oven to 425°F. Line a sheet pan with parchment paper and set aside.2️⃣Make the spice mixture by mixing cornstarch, cumin, 1 teaspoon oregano, paprika, ¾ teaspoon salt, and pepper in a small bowl.3️⃣Add the cauliflower and chickpeas to the sheet pan, then add the olive oil and spice mixture; toss to coat.4️⃣Place in the oven for 34-38 minutes, tossing a few times until the cauliflower is crisp and the chickpeas are slightly crisp.5️⃣While the cauliflower is cooking, make the whipped tahini by blending roasted red peppers, tahini, lemon juice, ¼ teaspoon salt, ½ teaspoon oregano, and pepper until smooth.6️⃣Remove the cauliflower and chickpeas, add baby spinach to the sheet pan, and return to the oven for 2 minutes until wilted. Toss with red bell pepper and onion.7️⃣To serve, spread the whipped tahini on a plate and top with the salad mix, sunflower seeds, parsley, dill, capers, honey and additional tahini if desired.

And I’m back with another episode of salads that aren’t really salads, roasted cauliflower style. These flavors are addictive. This roasted cauliflower and chickpea salad is served over a whipped roasted red pepper tahini. Start by roasting up our cauliflower and chickpeas and blending up this fiveingredient whipped roasted red pepper tahini. Add the remaining salad ingredients to the sheetpan. Toss it up. Spread out that delicious whipped tahini. Pop and enjoy.
