Husband and I celebrated our 4th anniversary today. My mom made us this amazing cake that is one of the best things I’ve ever eaten. I love pistachio anything but this cake is over the top.
I don’t have a recipe because she said she cobbled it together from multiple recipes. It has a cookie crust, a cashew/yogurt base (she used kite hill Greek style), pistachio cream layer, shredded phyllo pastry, and dark chocolate.
I wish my photography could do her cake justice; truly a labor of love.
