I just made a carmelized onion and Gruyère sourdough loaf the other day (well 5 actually) and it literally tasted like French onion soup. I can imagine that this bread probably has a similar vibe and I would devour the whole thing.
All that to say from one onion bread, lover to another, that is Exquisite! It is crack.
