These Shrimp Rolls are refreshing, full of flavor and unbelievably delicious!! Tender shrimp with a creamy dill dressing in a buttery toasted bun. One bite and you will be hooked!

Shrimp Rolls

Ingredients
1 1/2 lbs shrimp
1/2 cup mayo
2 tablespoons lemon juice
1 cup chopped celery
1/2 cup chopped green onions
2 tablespoons chopped dill
1 garlic clove, finely minced
For serving – split top hot dog buns (preferably brioche), butter

Directions
Boil a pot of salted water and add shrimp.
Let it sit (may not come back to a boil) until cooked through, about 1 1/2-2 minutes Transfer shrimp into a bowl of ice water.
Pat shrimp dry and chopped into small pieces
Combine mayo, lemon juice, celery, green onions, dill and garlic together in a bowl .
Stir in shrimp and season with salt and pepper.
Heat a little butter in a pan and toast buns on all sides.
Place shrimp filling into toasted bun and serve.

These shrimp rolls are refreshing, full of flavor, and unbelievably delicious. You have tender pieces of shrimp in a creamy dill dressing and a buttery toasted bun. And one bite, you guys are going to be hooked. So, I actually got this idea of making shrimp rolls while we were vacationing in Santa Barbara over the summer. And we were on the beach and my son, not my son, my husband ordered one and he said it was the best he’s ever had. So, ever since then, I was determined to make it right at home. So, to start off, I have 1 and 12 lbs of shrimp. And what I did is I put them in a pot of boiling salted water. And depending how large the shrimp are, you want to boil it for about 1 to 2 minutes. When it turns pink, it’s done. And then go ahead and transfer it to a ice bath so it stops the cooking. So, you want to go ahead and do that, which I already did. So, now I’m going to just cut them into bite-sized pieces. I didn’t get too large of a shrimp. These are about 20 25s just because this is going to be a shrimp roll. I mean, we don’t need like large pieces of shrimp. So So small shrimp would work in this recipe. So I’m just going to, you know, dice it up into about thirds so that it’ll be delicious in a lobster roll. Not lobster roll, shrimp roll. And speaking of lobster rolls, if you guys do love lobster rolls, you are definitely going to love these shrimp rolls. I mean, they taste just as good and they’re way more economical. I mean, you could spend $25 on a lobster roll and feed one person where with the shrimps, you can spend the same amount of money and you could feed at least four people. And like I mentioned, they are just as good. And when I did test out this recipe, both my older son, not my younger, cuz my younger is allergic to shrimp, but my older son and my hubby both asked for seconds, so I know this was really good. All right, so we are through cutting up our shrimp. Let’s go ahead and work on the creamy dill dressing. It’s going to be so good. What I love about this dressing is that it’s full of fresh flavors and that’s combined with the shrimp and the buttery toasted bun. It’s the ultimate combo. Okay, so for the dressing we are going to be needing half a cup of mayo, which is going to give it a creamy base. And then to that we’re going to add 2 tablebspoon of lemon juice, which is basically one lemon. And I really hated having to buy this lemon because I’m so spoiled with our lemon tree, but we ran out of lemons on the lemon tree and a bunch of them are green now. So, I’m just waiting for them to get nice and ripe. Until then, I’m going to have to buy some lemons. All right, so that’s the lemon juice. And now, I’m going to add one cup of diced celery. We’ve got half a cup of sliced green onions. We have two tablespoons of chopped dill. And then I’m also going to need, let’s see, here we go. I’m also going to need one clove of minced garlic. And I hardly ever use this garlic press just cuz, you know, I’m not really big on gadgets and I just usually just chop up my garlic. But since I want this finely minced, I’m going to use the garlic press. But feel free to just use your hands and finely mince it up. I’m going to stir everything together. I’m also going to give everything a good seasoning of some salt and pepper. I just love fresh cracked pepper in our shrimp bowls. All right, I’m going to give everything another good stir. And now it’s time just kind of push everything to the side to add in the star of the show, which is the shrimp. I know I should have probably made this dish in the summertime. We are now in the beginning of fall, but this is a great summer dish, but honestly, anytime is a good time for shrimp rolls. I mean, who is going to complain over here? So, I’m going to give everything another good mix. And after you mix it up, go ahead and taste and see if you want to add more mayo or of anything else. Um, this is not really like a ultra heavy mayoy shrimp roll, but if you want to add more mayo, go ahead and do so. All right, so our shrimp filling is good to go. It’s time to prep our buttery toasted buns. For the buns, if you guys can find some bio buns, these are Brios hot dog buns from Trader Joe’s. Regular hot dog buns will work, but these bio buns are just so good. It has a hint of like sweetness and it just goes really well with the shrimp rolls, but like I mentioned, if you want to use just plain old hot dog buns, that’s totally fine. And then I’m just going to go ahead and get these toasted up with a little bit of butter because butter makes everything better. Okay, meet me over at the stove. I have my pan heated between medium and mediumigh heat. going to add in some butter. And as soon as the butter melts, I’m going to toast the buns on all sides. And once one side is nice and toasted, go ahead and flip it to toast the other side. All right, let’s go ahead and toast this side. See how nice and brown they are looking. And let’s toast up the last side. And we are pretty much almost ready to serve our shrimp rolls. Looking good. See? Nice and toasted. I went ahead and filled up our shrimp rolls with that delicious shrimp filling. And omg, this looks so refreshing and delicious. And I just cannot wait to dig in. If you guys want to serve this just like how they do at the restaurant, you could serve this with a side of fries or a side of potato chips or if you want to be healthy, maybe a side salad, some kleslaw, um some roasted Brussels sprouts would be delicious. But anyways, it is my favorite time of this video. It is time for the taste test and I’m so excited because it is just looking so so good. Okay, cheers you guys. Hope I can do this cleanly. The mayo with the lemon and the garlic and the crunchiness of the celery and the dill and the buttery toasted bun. It is, like I mentioned, the ultimate combo. You guys have to try this out. My son is going to be so excited when he comes home from school. I’m just really excited to surprise him with this because he just loves these shrimp rolls.
