  1. You can dip your finger in water and gently press on the “hats” to flatten it

    It’s also a sign you may not have mixed quite long enough. When you do, generally they flatten out themselves.

    They should be going away or at least mostly by dropping the tray a few times and resting them just naturally flattens it.
    It could be potentially under mixing it.
    It’s a good job for a first try though!! Way better than what I did. Just keep experimenting
    Mine changes every time i try and I do the exact same things lol

    It means your meringue is undermixed. The tip should flatten onto itself!

    Mine looked pretty much like this the first few times 😅 Even though not “perfect” they should taste great anyway! I’m pretty sure you didn’t macaronage long enough, too much air still in the batter. Next time aim for “honey drizzle” consistency, slow flowing batter that flows from the spatula when handled gently, not in chunks. Michelle’s macarons on YouTube has a nice video about the consistency you should aim for. It gets better with experience 😊

  6. Usually, if your batter is not liquidy enough, you’ll get those hats or the track marks of your piping. You might not have mixed it long enough. Also, did you tap the tray? It gets the bubbles out, but it also helps to flatten the meringue.

    After you’ve tried making them two or three times, I highly recommend taking a class. You will know what problems you’ve had and will have questions directly related to your experience to ask the teacher. Some mac bakeries offer classes and if you have one nearby, Sur La Table has great classes as well.
