Not enough love for the collars! I once worked at smokehouse in Seattle and the collars were the only smoked salmon we didn’t vacuum pack. They were just loose in a bin for like $3/lb. Everything else was perfectly cut tails and fillets vacuum packed for $12-25/lb depending on species. The Filipino and Korean patrons knew what was up though. They’d get plastic grocery bags filled with collars from us and make out like bandits compared to the typical customer who wanted them over priced King fillet. Sure the collar takes a little work to get through to the goods, but it’s the best meat!
