Cooking 30 lbs of tomatoes into marinara sauce. It’s 9:15pm and I just got them through the food mill. I am officially insane. I do not see these being pressure canned until tomorrow 😂

The time I started canning pasta sauce at 8:30 PM (!!!!!! Started cleaning the tomatoes from the market at that hour), thinking Id be done in no time.
I worked through the night, taking 20 minute naps as each batch got processed, waking up to turn off the heat, then nap again till the pressure plug dropping would wake me up.
I kept going until I had to go to class the next day, I only just made it on time for 1:30pm
15. Hours. 😵💫

I had an early night. Pulled the jars out of the water bath at 10pm.
