Minestroni is one of the most underrated soups in my opinion. It is veggie packed, nutrientdense, and it’s really light on the budget. This is a vegetarian meal that is also really easy to make gluten-free if you need it to. It uses all kinds of different vegetables and beans. And what I like is that you can use what you like or have on hand. If you have zucchini, use it. If you have corn, swap that out and use it in there, too. If you have green beans, you can use that. has a lot of flexibility which makes this one of my favorite like clean out the fridge or if I just had to pick a ton of stuff from the garden like use it for that or I’ve been to the farmers market. This is just a really flexible vegetable soup that has um pasta and beans in it which makes it filling and hearty. And are you doing that? My mom always did that. She would put some water in her cans and she would use it and swish it around to get all that extra flavor out of the can and then she would pour it in. So, you need a half a can of water for this recipe. I like to cook my pasta ahead of time so that it um doesn’t get too it doesn’t soak up too much of the juice in the slow cooker, but you have some flexibility there. And use what you like. Use what you have on hand. It’s well seasoned and it’s delicious. It’s nourishing. I love serving this with some crusty bread, bread sticks, or sourdough or even some cornbread. It’s really good. It’s fun to take to a party because everyone loves it.
