My creamy roasted cauliflower soup has just six ingredients. And when you top it with crispy roasted chickpeas, it is just the most epic cozy dinner. You’ll start off by roasting cauliflower, onion, and garlic until they’re soft and a bit brown at the edges. The garlic cloves become so soft and caramelized. Throw all of that in a blender along with some salt and vegetable broth. Word of caution, never tightly seal a blender when you’re blending hot liquids. You basically don’t want the steam to get trapped under the lid. This blends up so rich and creamy, everyone will be shocked to learn that it’s vegan. Serve warm with crispy roasted chickpeas.
