In this video, I’ll show you how to make Yayla Çorbası step by step — smooth texture, aromatic mint flavor, and a rich creamy consistency.
It’s simple, healthy, and full of authentic Turkish taste.
✨ Ingredients:
1 teacup of rice
6 cups of water (1200 ml)
1 teaspoon of salt
1 tablespoon of flour
1 egg
1 cup of yogurt
For the topping:
3 tablespoons of oil
1 tablespoon of dried mint
Preparation
First, thoroughly rinse 1 cup of rice thoroughly with plenty of water.
Then, transfer the rice to a suitable pot and add 2 cups of water.
Stir the rice occasionally until tender.
For the soup dressing, combine 1 cup of yogurt, 1 tablespoon of flour, and 1 egg in a suitable mixing bowl and whisk until smooth.
The rice will reduce slightly in water as it cooks. Before adding the dressing, add 4 cups of cold water.
Take 1-2 ladles of the cooled soup water and stir it into the dressing.
Slowly add the warm yogurt dressing to the soup, stirring constantly.
Meanwhile, add 1 teaspoon of salt to the soup and stir. Let the soup simmer for about 5 minutes.
For the sauce, heat 3 tablespoons of oil in a suitable pan and add 1 tablespoon of dried mint. Let’s sauté the mint, stirring constantly.
Add the sautéed mint to the soup and stir well.
Divide the soup among bowls and serve. Enjoy!
